Copy Cat Dinner
A home cooked meal was hard to come by this week. It was just one of those weeks. I was so happy to be able to have everyone home last night and finally get in the Kitchen! Earlier in the week a dear friend sent me a photo of what she had for dinner and it looked so delicious! I told her I was going to copy it, so here it is! It was fast, easy and delicious, not to mention healthy!
I prepared quinoa according to package directions. Heated up two cans of black beans. Sauteed a ton of spinach (my friend used fresh kale - even better!) in olive oil and garlic until nice and tender. We had some great fresh salmon filets we sprinkled with salt, pepper and a little olive oil. We grilled the salmon for about 30 - 35 minutes until just done and browned on the edges. We plated everything together, put a little fresh lemon juice on the salmon and added fresh avocado. Done.
So fast and so good. No food left behind last night. Score.

Now I am off to more cleaning out and gearing up for a really busy weekend. I am already wondering when I will get to sleep this weekend!
