Things I can do with one hand - like make Guilt Free Peach Cobbler!

I've been absent from the computer and this blog lately, not because I've been off on some great trip, or too busy doing fabulous fun summer things or even because I've had what folks call writer's block.  On Friday morning, as in four days ago, I went "under the knife" to finally have my right shoulder repaired.  And repair it they did.  As far as I can tell they basically went in and gave me a new shoulder.  So, while I'm not exactly happy now recovering and living on pain meds, I am looking forward to being able to do some things with my right arm that I haven't been able to do.  Although, I must say, it's been a little fun (in an evil way) to tell my classes to drop and crank out push-ups while I just stand and count.  Ha!  

I've begun to move around a little more today and have discovered there are some things that CAN be done with one arm (even when it is the left arm while one is right handed.  That's just another challenge I'm taking on!)  Here are some things I've been able to do:

Text my friends when I'm really bored

Make cheese quesadillas for the Third Son for lunch.  He doesn't judge the presentation.

Read, read and read some more.

Catch up on many back-to-back episodes of Castle.

Love on my dogs.

Put laundry in the wash and move to the dryer.  (Folding will not happen)

Load and unload the dishwasher - which is good since no one else around here seems to think dishes need to be moved from the sink . . . ever.

Watch many episodes of FoodNetwork.  

Eat and think about more things to eat.  This is dangerous because I can't really move around to burn off any of this food I keep thinking about eating.

Shower and dress - although very slowly and with nothing that needs fastening, buttoned or zipped.  I have discovered that  I cannot shave under my arms and I'm not really sure what to do about that.  Can't imagine asking anyone in my household to do that one for me.  Same goes for putting on mascara.  It might be pretty scary around here for a while . . . 

AND make PEACH COBBLER.  Really.  I just had to do it today and I HAVE to share the recipe I sort of made it.  It was so good!  Who would guess one could bake with only a left hand?  

My sweet neighbor brought over the most beautiful fresh peaches ever.  I couldnt bear to let them simply sit.


Summertime means fresh peach cobbler.  I have a wonderfully easy, decadent recipe that I've made since I was in highschool.  I have been craving it since the peaches arrived at our home on Sunday.  Thank goodness I wasn't able to do anything with them until today or I might have caved and made the really decadent dessert.  Instead, I used a little imagination, looked at some other recipes out there and did a little work to come up with a Delicious, Guilt-Free Stay Fit Peach Cobbler.  Since I did it all with my left hand, you know it has to be easy!!  

Here are the steps.  I hope you try it!  (It has taken me three times longer to actually type this than it did to cook - that's how easy, and how slow I type one-handed).

PEACH COBBLER without the Guilt

4 ripe peach (not over ripe!), sliced
1/4 cup sugar poured over sliced peaches until the sugar melts

1/4 cup whole wheat flour
1/4 cup packed light brown sugar
3 tablespoons old-fashioned oats
1/4 tsp ground cinnamon
pinch of salt
2 tablespoons cold unsalted butter, cubed plus 1 tablespoon butter or coconut oil

DIRECTIONS:

Preheat oven to 350 degrees.
Place 1 tablespoon butter or coconut oil in center of 8x8 in. baking pan.  Heat until melted.

While pan is in oven, mix together flour, sugar, oats, cinnamon and salt in a small bowl.
Add butter and, with your fingers, work the butter into the dry ingredients. It will be crumbly.

Remove pan with melted butter or oil and spread peaches evenly in pan.  Next, sprinkle dry ingredients evenly over peaches.  

Bake for 20 minutes at 350 degrees, until topping is golden brown. Remove from the oven and serve warm.  It's even better with vanilla ice cream or frozen yogurt.

The flavor is so good.  There's a little crunch to the cobbler and just a hint of cinnamon and when it is warm and melts the ice cream it's just heaven.  And, best of all, one one-half cup serving is just at 200 calories.  Honestly, you gotta try this one!
