Slow Cooker Pork Tenderloin . . . even in the summertime

I don't normally think of using the crock pot or slow cooker during the summer - and I'm not really sure why. It's actually perfect for this time of year when you don't want to be slaving in a kitchen in this heat and there are so many other things to do this time of year! While my boys aren't back in school, they might as well be with the meetings, practices and other back to school they decide to cram in these days.  
I found a perfect way to have a great summer dinner tonight complete with fresh peas from the farmers market along with delicious ripe tomatoes.  This is really easy, tender and sweet.



Brown Sugar Pork Tenderloin


Ingredients:
1 Pork Tenderloin
1 1/3 cup brown sugar
3 T olive oil
1 tsp cinnamon
1 T Dijon Mustard
1 T garlic powder or more if you like
1/3 c of water

Directions:
Drizzle olive oil in bottom of crock pot.  Then mix all your ingredients together in the crock pot.
Place the tenderloin in the pot (single or we used two) and turn to cover with the marinade. Cook it on high for 3 - 4 hours.

Done! 

This just might be a new "go to" recipe for us!  Boys loved it and had plenty for pre-football and post-football practice!  Let me know if you give it a try!
