One Recipe - 2 Meals . . . So easy it's ridiculous!
Dinner last night was so good and so easy I'm almost embarrassed to share it. In fact, its far too easy to even call a recipe. The best thing about this easy, non-recipe kind of cooking is that I got a second meal out of it. That means I had a really good (and protein packed) lunch today. How can I NOT share that?
So, here's what I did for the non-recipe chicken:
CROCKPOT SPICY SHREDDED CHICKEN
In a crockpot place four boneless chicken breasts.
Cover with one jar of Salsa Verde. (That's the GREEN salsa, you know! It's a really clean, no extra added sugar, salt or anything product.)
Sprinkle with pepper, garlic powder and red pepper flakes.
Cover the crockpot, turn it on and let it do its magic all day until you are ready to eat.
What a beautiful concept!
When the chicken is cooked and tender remove it from the crockpot onto a cutting board. With forks simply shred the chicken and return it to the crockpot.
For the taco fixin's we had chopped red and yellow bell pepper, shredded cheese, jalepenos, chopped avocado. This is the fun part where you do what's just right for you.
I added a pot of black beans and roasted broccoli.
Warm the tortillas in a sauté pan or on a griddle. Fill with the shredded chicken and your taco pleasures. Everyone's happy. That makes me happy. It's nice to be happy, right?
That's one meal down.
The next day you have the makings for meal number two. The leftovers make a wonderful salad. Top your greens with Shredded Spicy Chicken, leftover black beans and avocado. And, of course, whatever else your heart desires.
That's a healthy, protein packed lunch to keep you full all day. Now you, too, will be happy.
