A Yummy Salad perfect for the Season

One of our fun Christmas traditions is getting together with a special group of friends each year.  We aren't exactly sure how it started, but it's one of the nights we always look forward to.  Sometimes we meet out and sometimes in each others' homes.  This year we met in one couple's home and each brought something yummy to share.  I immediately offered to bring the salad.  I know it sounds like the easy way out, but I love a good salad and like having an occasion to try out a new, fun creation.  Something the rest of my family might not appreciate.I found a beautiful, festive salad on Pinterest, so I can't take credit for it, but it's perfect for a Christmas table!  As you can see it was easy to gather and pack up to go, also.  When it was time for dinner I just tossed everything together and nothing could have been easier!photo copy PEAR POMEGRANATE SALAD IngredientsSalad2/3 cup chopped walnuts or pecans, toasted3/4 cup pomegranate arils3 oz feta cheese, crumbled1/2 cup dried cranberries2 Bartlett pears (firm but ripe), cored and sliced9 oz baby spinachDressing1/4 cup apple cider vinegar3 Tbsp extra-virgin olive oil1 1/2 Tbsp honey1 tsp dijon mustardSalt and pepper, to tasteDirectionsWhisk all dressing ingredients in a bowl to blend well. Place all salad ingredients in a large salad bowl, drizzle with desired amount of dressing then toss to evenly coat.
