WEEKLY MEAL PLAN. . . Back to the Tried and True

Since last week was pretty much a wash as far as my meal planning went, I decided to make sure I planned only the tried and true good stuff.  So, this week I'm sharing my three meals for the week as I am sitting here making out my grocery list.  The meals basically follow the "comfort food is good on dreary rainy days" theory as that is what we are having and I'm not seeing a forecast for the sun quite yet . . .

 1.     Really Good Crock Pot Black Bean Chili2.    Baked Chicken Parmesan3.    Quick and Easy Chicken Fajitas               Ingredients:4 - 6 oz boneless skinless chicken breasts, depending on your crowd1 red bell pepper, cut into strips1 green bell pepper, cut into strips1 medium onion, cut into strips3 T fresh lime juice1 tsp ground cumin1 tsp garlic powderMexican chile powder, to tastepepperpickled jalepenos for garnisholive oilSoft Whole Wheat TortillasReduced fat shredded mexican cheesereduced fat sour cream and or guacamole, or whatever you like!Directions:Wash and pat dry the chicken breasts.  Season with chile powder, pepper, garlic powder and cumin.  Place in a shallow dish or ziploc bag and cover with fresh lime juice. Spread olive oil in a cast iron skillet or other pan and heat on medium.  Saute' the vegetables until tender, 10 - 15 minutes.  Set aside.  In the same skillet cook chicken breasts until cooked, about 8 minutes on each side.  Remove and slice the chicken breasts into strips.  Place chicken and vegetables back in the skillet to keep warm until ready to serve.Warm the tortillas in the microwave and fill with the chicken and vegetables.  Top with cheese and other garnishes.These are my main meals for the week.  I will add a green salad to each meal and a side vegetable, such as roasted vegetables, brussel sprouts or broccoli.Have you made your weekly plan?  Is that something you do regularly?  Any of these meals look tasty?Enjoy Your Day!Signature
