WEEKLY MEAL PLANS . . . 3 meals for the week
I'm trying to do a better job this week of getting back to my Weekly Meal Planning. It does make my life so much easier! For whatever reason, I've been a bit lazy in the kitchen lately. I have found myself looking at the clock around 4:30 pm and then scrambling around to come with an idea, see if we have the ingredients, realize we likely are missing something and then make a mad dash to the store. In the Atlanta afternoon traffic. It's really not a good (or healthy!) way to get dinner on the table.Therefore, this week, I'm getting back on track, making a plan, writing a list and am making my life easier. It's my hope that maybe I can give you an idea to make your life easier also.So, with that in mind, here's the menu for the week. You'll notice I only have three meals planned and that is for a reason. It's my experience that usually something comes up so that I actually only need and use three planned meals to get us from Monday through Friday. I typically do not cook in on Friday nights and there is usually another event or two during the week that enables us to eat leftovers, have fewer around the table or eat out.1. Meatloaf Spinach Salad Spaghetti SquashMeatloaf is a great fall back recipe. While I am not a huge fan, my boys love it, it's easy and I don't have to really think to cook it. I don't follow a recipe for meatloaf. I basically make it the way I remember my mother making it with the exception of adding barbecue sauce to the ketchup for the topping. My creation involves a little this and a little that, namely grass fed ground beef, panko bread crumbs, 1 egg, spices, Tabasco and a little mozzarella cheese, stirred together, but not too much. I've always been told that one should not over mix ground beef.However, if you are looking for a recipe, this Turkey Meatloaf by SkinnyTaste looks really good!2. Roasted Chicken Italian Green Beans Roasted Butternut Squash and Brussel SproutsI love this recipe for Roasted Chicken from Ina Garten. It is easy and always so delicious. Your house will smell absolutely wonderful while it is cooking! If you haven't tried this recipe, please do it this week. ( I know those rotisserie chickens are SO easy to grab, but they are NOT as healthy as making your own. If fact there's something on about that on Dr. Oz this week. Let me know if you tune in and what he says. )3. Really Good Crockpot Black Bean ChiliI love a good crockpot meal! This one is a good one for a busy, Fall day.That's it for our week.
