My Favorite Pot Roast. . . and it's made in the crock pot!

I want to begin  by thanking you all for the wonderful feedback from my last post.  I had such great comments on Facebook that I feel a wee bit less crazy now!  Today will go back to normal programming with a recipe for my favorite pot roast.It's exam week here for my boys.  That makes me sooooo glad I am not a student and makes me want to serve some good ol' comfort food.  When I think of comfort food I think of a warm and delicious pot roast with vegetables.  My grandmother made the best ever.  Now that I am the cook for the family I marvel that she was able to get her perfect pot roast on the table for lunch after church on Sundays!  That would truly be a miracle for me.Years ago I got this recipe from my paralegal, Gretchen, while we worked at the State Attorney General's Office.  Lo and behold the pot roast is made in the crock pot so you already know I'm loving it!  It is also one of the easiest and most foolproof thing you can make.  Honestly, there is absolutely no way to go wrong with this recipe.  The original recipe calls for one packet of Lipton Onion Soup Mix.  I confess I used that for years but have lately begun making my own to cut out any processed stuff I can't pronounce and any MSG.  The extra steps are basically throwing spices together so I promise the whole thing still only takes minutes to throw together.My Favorite Crockpot Pot Roast1 4-5 lb beef chuck roast2 onions, quartered1-1 1/2 baby red potatoes, clean and halved8 large carrot, chopped into large pieces  (or more - I love the carrots!)1 can beef consomme1-2 Tablespoons Homemade Onion Soup Mix (recipe below)salt and pepperDirections:Option 1:  Salt and Pepper chuck roast and sear in a pan coated with olive oil to brown all sidesOption 2:  Salt and Pepper chuck roast and place in bottom of crock potI've done both and like the outcome either way!Place chuck roast in bottom of crock pot.  Sprinkle onion mix over the roast and pour the beef consomme over the top.  Top the roast with the vegetables.Cover the crock pot and cook on low for 8 - 10 hours.Uncover occasionally and stir the vegetables around. Your pot roast is ready when the meat basically falls apart when you stick it with a fork!  It is tender and delicious and your house will smell amazing!  Fool folks into thinking you've been slaving for hours. . .Homemade Onion Soup MixIngredients1 1/2 cups minced dried onion2 tablespoons dried parsley2 tablespoons onion powder1 tablespoon ground turmeric1 tablespoon garlic powder1 tablespoon Real Salt2 teaspoons organic cane sugar1 1/2 teaspoons celery salt1 teaspoon ground pepperMix all ingredients together and store in an air tight container.********************************************************************Now since my own pot roast is simmering in my crockpot and I am posting in Real Time I do not have a photo to share.  I would rather share with you the smells that have drifted from my kitchen throughout the entire home.  Heavenly.Please give this one a try when you are in the need (or want) of some good old fashioned comfort food.Enjoy Your Day!Signature  'I don't care if the pot roast was a little dry, you had no business condemning poor Gloria to hell!'
