Mediterranean Quinoa Salad
I have the perfect salad for you to make and have on hand for your busy days ahead. Remember, this is the month to take care of yourself! (See my previous POST). This is not the time to throw your health and well-being out the door with the trash. Take 20 minutes to make this salad and enjoy it for lunch or dinner. It would be the perfect snack to have before going out to a party.It is full of antioxidants as well as protein to keep you satiated. Personally, I make and mix it and leave it undressed so it will last longer in my fridge. No more wasting time on words, here's the recipe. MEDITERRANEAN QUINOA SALAD (with Tahini dressing)Ingredients:1 cup quinoa1 cucumber, chopped5 oz argulapinch pepper12 oz jar roasted red peppers, drained and sliced10 oz chickpeas (drained)3 Tb Pine nuts2 oz crumbled feta cheeseTahini Dressing:1/2 avocadopinch pepper1-2 tsp minced garlic3 T fresh lemon juice1 cup fresh parsley1/2 C tahini1/4 C extra virgin olive oilDIRECTIONS:Cook quinoa and set aside to cool slightly. In a large mixing bowl, throw in argula, quinoa, and remaining ingredients. Toss well.To prepare dressing, put parsley in bottom of blender or food processor and follow with remaining ingredients. Mix Well. It will not be runny. If you want it in a more liquid state add more olive oil. Set aside.To serve immediately, mix dressing well into salad until evenly coated. To serve later or to have in the fridge for lunches, snacks or dinners, cover the dressing and use with amount of preferred salad at each serving. ENJOY YOUR DAY!***I'VE UPDATED MY SHOPPING PAGE!
