Roasted Turmeric Cauliflower

I posted this super quick but great vegetable side on my Instagram recently and had so many people comment and ask for the recipe.  How flattering, right?  Tonight this was one of our veggie sides and it is a great favorite.  The Third son evens eats all of it.  He even asked me tonight what cauliflower did for his body.  Well, what a great question!  And if you are wondering the same thing, here are all the great things about eating cauliflower and tumeric.Cauliflower is a wonderful low carb,  cruciferous vegetable full of vitamin C, vitamin A and potassium.   Tumeric is an anti-inflammatory spice that is really good for the gut.  It is a wonderful, beneficial addition to our foods.  This spice comes from a shrub related to ginger, and has been used to treat heartburn, stomach ulcers, gallstones, inflammation, and cancer.All that from just adding a great tasting spice to your food!If you are joining me on the Better & Beyond Program, this is a great low carb option!

Roasted Turmeric Cauliflower

  • 1 head cauliflower
  • 2 T olive oil
  • coconut spray
  •  1 t turmeric
  •  ½ t cumin
  •  ½ t crushed red pepper
  • 1/2 T 2 crushed garlic
  • 2 T water
  •  Preheat oven to 400F. Chop the cauliflower into florets.  Whisk together all the ingredients.  Line a flat pan with aluminum oil.  Spray the foil with coconut spray.  Place the cauliflower on the pan and pour the tumeric mixture over the cauliflower.  Mix it thoroughly.  Roast for 30 minutes.
