Simple Rotisserie Chicken Salad
Today's little recipe share came from two things that I feel very strongly about.
- My hatred for waste and
- My LOVE of chicken Salad.
It's really that simple. Over the years I've shared some chicken salad recipes. If you want more, do a search in the searcher for chicken salad and you'll find a couple more!Today I was looking in my fridge and noticed I had a forgotten rotisserie chicken that I bought, only ate a bit from, and was about to throw away. Since I HATE waste I used what I on hand and concocted this incredibly simple chicken salad - tasted it- and knew it was delicious enough to share.This is a simple "go-by" for what you might have on hand. I hope you try this next time you have leftover rotisserie chicken, or any chicken.
Simple Rotisserie Chicken Salad
Ingredients:Leftover Rotisserie Chicken, skin removed and chopped3 spring onions (I would have used celery had I had any, but I do like the little kick this brought!), chopped1/2 Granny Smith apple, chopped1 T white vinegar1 Tsp yellow mustard1/4 cup plus Primal Kitchen avocado mayo (use your own measurement here as mayo is a VERY personal thing!)Lemmon Pepper, to tasteBlack Pepper, to tasteIn a medium sized bowl mix well the chicken, onions and apple. Sprinkle with the vinegar, and mix the remaining ingredients, seasoning to taste with the lemon pepper and black pepper. Cover tightly and let sit in the fridge until ready to serve.How simple is that?
