A Little Refreshing Salad . . .

It is Sunday evening and I am on the couch.  I am so tired and was so hungry earlier!  I've spent about 7 hours at a fantastic training for a new energizing functional fitness training class that is about to hit the fitness scene.  It's a great workout called QiFORZE.  I've written about it earlier here.  I will write about it later as tonight I'm far too tired!!  So, I sm going to share a wonderful refreshing salad I made today for a friend.  I made double so we would have enough to try and it's my new favorite "go to" summer salad!  It came from this month's Better Homes and Gardens magazine.  If you like cucumber and honeydew melon you are in for a treat!  I hope you try and enjoy!

CUCUMBER HONEYDEW MELON WITH FETA

2 T lemon juice
1/4 C olive oil
1 tsp honey
1/4 tsp salt
1/4 tsp black pepper
1/4 tsp poppy seed (optional - I didn't use)
1 medium honeydew melon, cubed
1 cucumber, unpeeled and cubed
1/3 chopped red onion
3 T chopped fresh dill weed
4 oz feta cheese, crumbled, 1 cup
In large bowl pour lemon juice.  Whisk in olive oil in a slow steady stream until incorporated.  Whisk in honey, salt, pepper, and poppy seed (if using).  Add melon, cucumber, onion and dill weed.  Toss.  Top with feta cheese.  Makes 10 servings.  
Cover; chill.  Let stand 20 minutes before serving.

118 cal; 8 gr. fat; 10 mg. chol; 11 gr. carb; 1 gr. fiber; 2 gr. protein.

So refreshing!  Soooo good!!  I hope you try and enjoy!!
