Easy Jambalaya - Cook it Indoors or Out

One of my favorite things about the Winter Season - likely the only thing I like about photo copy 4Winter - is cooking one pot meals such as soups, stews and chilies.  They can be so comforting, easy, and, especially, healthy.  As the weather turns warmer it is normally time to say goodbye to these meals and hello to grilling outside and, because you have to stay with the grill, it's also hello to some higher maintenance meals.The weather over the weekend in Atlanta was perfect.  It pushed us outside for most of the weekend - and especially for preparing and eating meals.  The Husband loves to use his Big Green Egg, so is always looking for new things to prepare.  He found a recipe this weekend that was the perfect combo of an easy one pot meal AND a cook outside on the grill to enjoy the weather recipe.The entire recipe CAN be prepared inside on the stovetop OR outside on a grill or BGE OR it can be done as we did - in 2 steps.  Since it was Masters Sunday and I knew he would want to be glued to the TV, I prepared the first part of the recipe at the stove and he finished it simmering it  on the BGE.  A perfect combo!  So, however, you like to cook and enjoy the  process this recipe is the answer.  And there were no leftovers.  Score! EASY JAMBALAYA1 lb Grass Fed Lean Ground Beef1 lb Turkey Sausage - sliced1 medium onion - chopped1 cup celery - chopped3-4 cloves garlic - minced1 green bell pepper - chopped2 cups low sodium beef broth1 can Cajun style diced tomatoes, undrained1/2 cup chopped Cilantro5-6 Tsp Cajun seasoningDash Red Pepper flakesPepper to taste2 Cups uncooked long grain brown riceHot Sauce to tasteFor using the BGE, set direct cooking at 500 degrees.Cook first 6 ingredients in a dutch oven until beef is brown and tender and drain.Stir in broth and next ingredients to Hot Sauce.  Bring to a boil and stir in the rice.photo copy 3(At this point we moved to the BGE to simmer)Cover and reduce heat to about 350 degrees and simmer 25-30 minutes until the rice is tender.Top with hot sauce if desired.  photo copy 3There you go!  Great for a crowd or just you.  Let me know if you give it a try - and whether you make it inside our outside.What are your favorite Spring time meals?  Do you change your meal plans with the Season?  And are you shoveling mounds of pollen out of the way to be outside?Enjoy Your Day!Signature
